With the return of Apollo's godly form came a swath of senses he'd lost as a mortal, including the ability to recognize other beings of a divine nature. There's certainly... something about her, though she must be from another pantheon as Apollo can't quite place it.
Still, divine or not, the fact remains that she is divinely beautiful, and the darkness about her accentuates her features; She stands out boldly among the other patrons. Briefly, Apollo wonders if this is what his son finds so attractive about Nico, but that thought is quickly drowned out as he starts weaving together lines of poetry in his mind. Bold and beautiful, shadows cutting through the... light? Through the sun? Straight into my heart? Perhaps he'll take a minute or so to workshop it further.
Then he wonders if perhaps he's already falling back into toxic old habits. She has not caught his gaze again since that first glance, and seems very interested in her book. Apollo likely wouldn't be pleased if he was interrupted in such a way, even if he doesn't understand why one would bring a book to a bar in the first place.
He would request her attention in a more polite and socially acceptable way.
And if the answer was no, he would simply... accept the rejection... and not pursue.
His newfound character development is grating against millennia of deeply-ingrained habits, but perhaps this would be his first test in being able to keep his promise to Jason.
Apollo says something to the bartender, and in a few minutes, one of the barmaids brings another glass of wine to Valdis' table, pointing Apollo out. If Valdis looks up, he will smile and wave awkwardly.
